Recipe: Simple Cold Wild Rice Salad

Serves two.

INGREDIENTS

2 cup wild rice blend cooked
1 avocado diced
4 roma tomato diced
1/2 cup cashews chopped

METHOD

  1. Add all ingredients in a bowl and gently stir through.
  2. Chill for 10 minutes before serving.

NOTES

Rice can be cooked fresh however allow to chill before adding other ingredients. Wild rice blend is a mix of wild rice and white rice. Of course, the recipe can be varied to please to taste.
